Ingredients:

  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 eggs
  • 2 cups dashi (Japanese soup stock)
  • 1/2 cup chopped octopus (cooked)
  • 1/4 cup chopped green onion
  • 1/4 cup dried shrimp
  • 1/4 cup tenkasu (tempura scraps)
  • Takoyaki sauce
  • Mayonnaise
  • Aonori (dried seaweed flakes)
  • Katsuobushi (dried bonito flakes)

Instructions:

  1. In a large mixing bowl, combine the flour, baking powder, and salt.
  2. In a separate bowl, beat the eggs and then add the dashi.
  3. Add the egg and dashi mixture to the flour mixture and mix until smooth.
  4. Add the chopped octopus, green onion, dried shrimp, and tenkasu, and mix well.
  5. Heat a takoyaki pan over medium heat and grease it with oil or cooking spray.
  6. Pour the batter into the pan until the wells are about 3/4 full.
  7. Cook for about 1-2 minutes, or until the edges of the takoyaki are slightly crispy.
  8. Use a skewer or takoyaki turner to flip the takoyaki over and cook for an additional 1-2 minutes, or until the other side is crispy.
  9. Serve the takoyaki hot, topped with takoyaki sauce, mayonnaise, aonori, and katsuobushi. Enjoy!
