  • 1/2 pound of cooked and peeled shrimp, cut in half lengthwise
  • 8-10 round rice paper wrappers
  • 2 cups of shredded lettuce
  • 1/2 cup of fresh mint leaves
  • 1/2 cup of fresh cilantro leaves
  • 1/2 cup of fresh Thai basil leaves (optional)
  • 1/4 cup of chopped peanuts
  • 1/4 cup of hoisin sauce
  • 1/4 cup of peanut sauce

  1. Prepare a bowl of warm water to soak the rice paper wrappers in.
  2. Dip one rice paper wrapper into the water for about 10 seconds, or until it softens.
  3. Place the softened rice paper wrapper onto a damp towel or plate.
  4. Add a small handful of shredded lettuce, a few mint leaves, a few cilantro leaves, and a few pieces of the cooked shrimp onto the center of the rice paper wrapper.
  5. Fold the bottom of the rice paper wrapper up over the filling, then fold in the sides, and roll up tightly like a burrito.
  6. Repeat steps 2-5 for the remaining rice paper wrappers and filling ingredients.
  7. Serve the shrimp rolls with a sprinkle of chopped peanuts, and a side of hoisin sauce and peanut sauce for dipping.
