Ingredients:

  • 8 ounces (about 225g) egg noodles
  • 2 cans of tuna, drained
  • 1 cup frozen peas
  • 1 cup sliced mushrooms
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 1 cup shredded cheddar cheese
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried parsley
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs

Instructions:

  1. Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish and set aside.
  2. Cook the egg noodles according to the package instructions until they are al dente. Drain the noodles and set them aside.
  3. In a large skillet, melt the butter over medium heat. Add the onions, garlic, and mushrooms, and sauté until they are softened and slightly browned.
  4. Sprinkle the flour over the vegetables and stir well to combine. Cook for an additional minute to cook out the raw flour taste.
  5. Slowly pour in the milk, whisking constantly to prevent lumps. Cook the mixture over medium heat, stirring frequently, until it thickens and comes to a simmer.
  6. Add the shredded cheddar cheese to the skillet and stir until it melts and incorporates into the sauce. Season with dried thyme, dried parsley, salt, and pepper. Taste and adjust the seasoning as needed.
  7. In a large mixing bowl, combine the cooked egg noodles, drained tuna, frozen peas, and the cheese sauce. Mix everything together until well combined.
  8. Transfer the mixture to the greased baking dish, spreading it evenly. Sprinkle the breadcrumbs over the top.
  9. Place the casserole in the preheated oven and bake for about 25-30 minutes, or until the top is golden brown and the casserole is heated through.
