Ingredients:

  • 1 whole grouper (size according to your preference)
  • 4 cloves of garlic
  • 5 shallots
  • 3 cm piece of ginger
  • 2 cm piece of turmeric
  • 2 stalks of lemongrass, bruised
  • 3 kaffir lime leaves
  • 3 bay leaves
  • 2 tomatoes, cut into chunks
  • 1 stalk of spring onion, thinly sliced (optional)
  • 2 tablespoons of cooking oil
  • 1 tablespoon of tamarind paste (or lime juice)
  • Salt to taste
  • Pepper to taste
  • Banana leaves for wrapping (optional)

Instructions:

  1. Clean the grouper thoroughly, removing any scales and dirt. If you prefer to use banana leaves for wrapping, brush some cooking oil on the surface of the banana leaf and place the fish on top.
  2. Blend or finely mince the garlic, shallots, ginger, and turmeric into a smooth paste.
  3. Heat the cooking oil in a pan and sauté the spice paste until fragrant. Add the lemongrass, kaffir lime leaves, bay leaves, and tomato chunks. Stir-fry until the tomatoes are slightly wilted.
  4. Sprinkle salt and pepper over the entire surface of the cleaned grouper. Then, coat the fish with the sautéed spice mixture.
  5. If using banana leaves, tightly wrap the fish in the banana leaf, ensuring it is well-sealed.
  6. Grill the seasoned grouper on a preheated grill or barbecue. Cook until the fish is perfectly done and the flavors have infused, which usually takes around 20-30 minutes, depending on the size of the fish and the grilling temperature.
  7. During the grilling process, flip the fish occasionally to ensure even cooking and to prevent the spices from burning.
  8. Once cooked, serve the grilled grouper hot with steamed rice and sambal for an extra kick.
