  • 1 lb (450g) white fish fillets (such as cod, haddock, or tilapia), cut into chunks
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 large tomatoes, diced
  • 1 carrot, peeled and sliced
  • 1 celery stalk, sliced
  • 1 leek, cleaned and sliced (white and light green parts only)
  • 4 cups fish or vegetable broth

  • 1/2 cup dry white wine (optional)
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped

Instructions:
