They are a versatile and delicious option for a snack, appetizer, or even a main course. Here's a simple recipe to make them:

Ingredients:

  • 2 cans (about 10 ounces each) of canned tuna in water, drained
  • 2 cups mashed potatoes (about 4 medium-sized potatoes)
  • 1/2 cup finely chopped onion
  • 1/4 cup finely chopped celery
  • 1/4 cup finely chopped red bell pepper (optional, for color and flavor)
  • 2 cloves garlic, minced
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon lemon juice
  • 1/2 teaspoon dried oregano (or your favorite herbs)
  • Salt and pepper to taste
  • 1 cup breadcrumbs (for coating)
  • 2 large eggs
  • Vegetable oil for frying

Instructions:

  1. Peel, chop, and boil the potatoes until they are soft. Drain and mash them until smooth. Set aside.
  2. In a skillet, heat a little oil over medium heat. Add the chopped onion, celery, and red bell pepper (if using). Sauté for about 3-4 minutes until the vegetables are softened and the onion is translucent. Add the minced garlic and sauté for another minute. Remove from heat and allow it to cool.
  3. In a large mixing bowl, combine the drained tuna, mashed potatoes, sautéed vegetables, mayonnaise, Dijon mustard, lemon juice, dried oregano, salt, and pepper. Mix everything together until well combined. Taste and adjust the seasoning as needed.
  4. Take a portion of the mixture and shape it into a croquette or patty. You can make them round or oval-shaped. Repeat this process until all the mixture is used.
  5. In a shallow dish, beat the eggs. Place the breadcrumbs in another shallow dish. Dip each croquette into the beaten eggs, ensuring it's coated on all sides, and then coat it with breadcrumbs, pressing gently to adhere. Place the coated croquettes on a baking sheet.
  6. In a deep skillet or frying pan, heat about 1 inch of vegetable oil over medium-high heat until it reaches 350-375°F (180-190°C). You can test the oil by dropping a small piece of breadcrumb into it; it should sizzle and turn golden brown.
  7. Carefully place the croquettes into the hot oil, a few at a time, without overcrowding the pan. Fry for about 2-3 minutes on each side, or until they are golden brown and crispy. Use a slotted spoon to remove the croquettes from the oil and place them on a plate lined with paper towels to drain any excess oil.
  8. Serve the tuna croquettes hot with your favorite dipping sauce, such as tartar sauce, aioli, or ketchup.
